My Toro mower has single speed throttle but for some reason it seems to have dropped down to a lower speed.
I think it happened when mowing around a bush. Could the throttle cable have gotten caught somehow and become
out of adjustment for the correct speed? How do I adjust back to the correct speed?

Kohler tend to protect their throttle mechanism a lot better than Briggs do.
they are also a fir bit more complicated than Briggs so we really will need you to remove the air box and take a couple of photos.
It is not the sort of thing we can talk you through without seeing what might be bent.
It is very easy to adjust the engine way too high and there is a fairly fine line between too fast and Bang.

You might like to download the Kohler manual and compare what your linkage looks like comparred to what the one in the book looks like

Just keep in mind the throttle cable pulls the throttle open.
The govenor works against the throttle and tries to close the throttle down
