I wonder if the fuel cap is not venting properly? And the wait allows the pressures in the tank to stabilize again?

If it is not the fuel cap, it might have dirt in the fuel tank. As the engine runs, all the debris gets sucked toward the fuel outlet like a vacuum and plugs up. When it sits a while, the debris once again settles in the bottom of the tank.

Check the fuel system from one end to the other for blockages. Also check the float bowl to see if it has water or sediment in it. Even a small amount of water can cause trouble. Sounds like a fuel starvation problem from either debris clogging it somewhere, or perhaps a needle sticking closed at times and starving the engine. Manually move the float up and down and watch the needle to see if it's cutting off fuel or not. Could be something temporarily covering the needle and seat area above the needle. I've seen that many times. When it runs the foreign material will bounce around until suction pulls it down on the inlet and then the engine dies. Let it sit a while and it will float off and away until it gets sucked down again and the cycle repeats.
