I am installing a new engine in a riding mower, The old engine has a manual choke. The new engine is a choke o matic, What needs to be done to keep the manual choke?

Engine make/model will allow better answers.
In general terms, a rod from a thermostat attached to the muffler controls the choke plate. As muffler heats up, choke opens more.
Remove that rod and attach the choke cable to pin rotating choke plate. Will have to figure out how to bracket choke cable.
If I make the new engine an auto choke what do I do with the manual choke control?
Old engine number is Briggs and Stratton 445877-0130E1. New engine Briggs and Stratton 44S977-0032
Remove the link between the throttle and the choke
Hook the old chole cable to the new carb
Just becareful because some auto chokes push so you might need a little crank to convert the pull for on to a push for on.
Or just leave it which will maket those who don't know when the choke is out it is off.
