New guy. Sorry. :)

I've got about 3/4 - 1 ac. to mow and most of it is UNflat. I'm guessing a max 20 - 25% grade.

Looking at the RZT SX 46" (steering wheel model) fabricated deck, and wondering how it will track on hills and how stable it will ride.

Unfortunately, there's no place to "test drive" this $4-5K purchase) Any wisdom here would help. Thx !

Would wider rear wheels make it more stable?

YEs they will handle hills a lot better as they have more downforce on the front wheels which of course are controlled.
Requires you to be very careful in keeping the area between the floor plate & frame plate very clean.
There was a similar Toro which is a much better mower.
And remember mowing across a hill with a vertical shaft mower can cause oil starvation in 2 to 3 minutes so watch how you travel .

Update, Toro has discontinued production of the steering wheel line of Z-turn mowers.
