Simplicity Regent Hydro rider 14 hp. Turns over, starts, but only if key is held

Just put a new solenoid on. Started right up. Went to cut the grass, and the PTO would not engage. Tested the PTO using a separate 12 volt battery. It worked fine. The wiring to the PTO looked fine and was connected. Bought a new PTO on/off switch. Hooked it up. Then tried to start it, but it would not stay started. If I hold the key in place it runs but as soon as I release it ... it stops. It almost feels like something is turning it off.... like the seat switch or some other safety switch. I really don't get it!!

You are on the right track, I to think it is on of the safety switches. Check each one for dirt or bad connections.

Look at the connection under the foot deck by the brake . We get these in the shop where an owner has stepped on the harness breaking the plastic plug .
