Is it better to an separate pump for each drive wheel motor or a single unit pump for both drive wheel motors?

With the choices you have given, 2 pumps are better than one.

I don't see a good reason for two.
If you have only one pump and it fails, you're dead in the water. If you have two pumps and one fails, all you can do is pivot, which is the same as dead in the water.
