Is Well-Rotted Woodchip the Best Mulch for Scottish Garden Beds?

Hello everyone.

I have been looking into using organic woodchip mulch for my garden borders and raised vegetable beds. I keep reading that well-rotted woodchip is far superior to fresh chippings because it does not rob the soil of nitrogen during decomposition.

Has anyone actually used aged woodchip mulch in Scottish gardens where the climate tends to be wetter and cooler? I am particularly curious about how thick the layer should be applied to suppress weeds effectively without causing waterlogging or slug problems.

Would love to hear from gardeners who have experience using it around both ornamental plants and edibles.
