The best explanation is spark plugs do weird things on Honda engines. And it doesn't matter if it is the GX/GXV or GC/GCV or even the TRX engines.

Will spark until warm and then start sparking, Will run a few minutes, and then die, and attempting to start just causes a backfire, or my favorite is the spark plug is sparking but jumps the gap between the center electrode the side of the plug instead of the electrode sitting just .030 above it.

Wish I knew. Here’s a theory. Maybe it had nothing to do with the choke. Obviously, you had spark since it started. Maybe the plug was weak and failed altogether after it got hot, as in after 30 seconds of run time.
 
Many spark plugs are counterfeit these days. I trust Champion spark plugs more than NGK because of copycat issues.

I have seen many plugs that will fire out in the open air when testing but fail under compression pressure.

One thing that can often kill a spark plug is if it is dropped on a concrete floor because the internal resistor gets cracked.

I resemble that remark. Three days ago I was in the process of selling a nice BBC Honda mower that I had rehabbed a few months ago. I explained to the buyer that these mowers came with fuel shutoffs. Then I turned the fuel off, thinking I was turning it on. I even showed the buyer the decal on the filter housing showing the on/off positions. Being expert, I didn’t bother to read it. I confidently let him start the engine, knowing how easily it started. A minute after the buyer left I remembered to check the shutoff valve.
