I have a riding mower that dies when I release the brake or pull the PTO switch. I replaced the seat safety switch, clutch switch, ignition, and PTO switch and the wires are all in good shape (no open wires or kinks). I still have the same issue, the mower starts right up but dies when I release the brake.

There is a safety circuit that runs from the magneto to the parking brake switch to the seat switch to ground
So that he mower stops if you fall off
there is a safety circuit that runs from the magneto through the PTO switch through the seat switch to ground
So you can not get off and shove your hand into the discharge chute while the blades are running.

Nothing magical about it
The thing common to both is the seat switch so either yours is faulty or the wiring to / from it is faulty

Note both of the circuits are GROUND circuits so fault tracing is by checking continuity to GROUND

The magneto is killed by grounding it out so all of these wires & switches should be open circuit to GROUND for the mower to run and closed to ground to stop
